Since Abe-Shuzou’s establishment in 1804, the Touji (Master of Sake’s brewer) have been served by the President for generations. This special tradition is called “Uchi-Touji”. In every generation, fathers instructed their sons directly, and this is how every Touji learned the method of brewing Sake. Therefore, our method has not changed for more than 200 years. No Touji has ever learned at brewery schools, so we have a unique method of brewing Sake, and this is the essence of our Sake.
Our brewery is quite small, so we can only brew 50koku (1 koku = 180 Liters), and our Sake is all handmade.
