Made using the Kimoto method and a bit on the dry side, this sake is very approachable and flexible. Quite good chilled, but it really blossoms at room temperature or gently warmed which brings out more richness on the palate.




This sake is a favorite of mine, due to it’s ‘roasted’ flavor. Clear, sweet-straw scent, completely dry, with that toasted note that, yes, truly blossoms when warmed.

I’m currently enjoying a big bottle of this. How should I store it once opened? Make a lot of room in the frig. or is it okay to leave it out?
