Haccoba
A boundary-pushing brewery from Odaka, Haccoba blends the traditions of doburoku with modern craft-beer techniques—most notably adding hops during fermentation—to create vibrant, layered brews that blur the line between sake and beer.
Pukupuku Brewing
Founded in 2024, Pukupuku crafts expressive, naturally fermented sake that reimagines regional folklore and brewing traditions. Their playful, hop-infused and doburoku-inspired creations celebrate the agricultural landscape of Fukushima Hamadoori.
Naturadistill
From a renovated village pharmacy in Kawauchi, Naturadistill distills spirits rooted in Japan’s native botanicals. Their small-batch approach captures the quiet beauty of the surrounding mountains, merging traditional techniques with modern experimentation.
Ichido
Based in Tomioka, Ichido produces elegant rice shochu using wild “flower yeast” and gentle vacuum distillation to preserve its delicate aromatics. Their fragrant, herb- and fruit-infused blends become naturally crafted cocktails inspired by the subtle flavors of blossoms.
