The cult appeal of Hideyoshi sake is embodied by the remarkable Flying Pegasus Daiginjo Koshu. Limited to a production of only 300 bottles a year, it is made using a blend of 5 to 8 year cold-aged sakes, combining the unique attributes of each into an infinitely complex whole. With such high-quality and singular sakes, it is no wonder that Hideyoshi sake has been embraced and celebrated by connoisseurs worldwide, winning numerous awards with their philosophy of innovation and tradition.
This Akita based brewery, which has been run by the same family for 19 generations since it’s founding in 1689, is led by multi-award winning toji Shigemasa Ishizawa who uses only the highest quality local sake rice that impart deep, rustic flavors and incredibly long finishes to the silky-smooth sakes giving them tremendous charisma and personality.
