★ 13.00 – 13.30 Presentation by sake specialist Kasia Hitchcock, guiding you through the history and the contemporary achievements of inspirational women in the Japanese sake industry. From tōji masters (chief brewers), brewery owners, educators and Sake’ambassadors’.
As both International Women’s Day and Mother’s Day approach, UKiYO Republic and Sway Gallery London would like to invite you to a social gathering and sake tasting dedicated to Japanese women in the Sake industry.
When the Gods created sake, they gave the brewing responsibility into the trusty hands of women… Well, at least until 16th / 17th century, when increased demand, more laborious production and industrialisation of sake brewing were taken over by man and eventually led to banishing women from the breweries.
The ‘men only’ rule was still widely accepted until 1976, when Ichishima Shuzo in Niigata Prefecture officially opened its doors to women.
Nowadays, more women are entering into the sake industry, but the number of female tōji remains very small.
Sway Gallery Sake Shop & Bar will retail especially selected sake bottles produced or influenced by women.
