This elegant daiginjo is made from a very special strain of an already special sake rice: Yamada Nishiki. The farmers growing this rice are 5th generation rice farmers. The yeast used in this sake is from the Aberia flower. This special flower yeast gives this sake its lush and glossy taste and its delicious but restrained aroma. You_
