Description

The Heavensake brand is a collab between french cellar master Regis Camus and some top tier Japanese Breweries. In this case, Konishi Sake Brewery out of Itami City Hyogo Prefecture. This junmai is distinguished by it’s lower ABV – just 12%. It is therefore lighter-bodied but the smooth and gentle rice, cocoa and nutty aroma create a creamy backdrop for pairing with rice-based dishes as well as mushroom or cheese. Don’t be afraid to let this sake warm up just a touch as the umami will blossom.
