A soft and fruity junmai Ginjo from Ishikawa. Soft peach on the nose. A play between sweetness and light acidity on the palate. soft but lingering aftertaste. This sake uses water from Hakusan Mountain. It was also served at the 2012 Nobel Prize dinner after party party that honored of Professor Yamanaka for his award in stem cell research.
