    Hey Tim & Co!
So this is one of the sake I show all over Texas, as Niigata Sake Selections’ Import Agent – this is one of my blockbusters because it is soft, approachable, and a great transition from the wine world into sake.
Since Tanaka-san halted fermentation, thus keeping the sugar from turning all into alcohol, it has remained sweet, but the aromas of red fruit & seed fruit are astounding!
I smell apple & overripe pear, with lychee fruit.
I taste cooked apples and fresh strawberry notes.

I paired this recently with ceviche & fish tacos – and it is awesome with strawberry blintzes too!
