On Wednesday, March 2nd, SAKAGURA will play proud host to one of the most innovative brewery, Nishiyama Shuzo (http://www.kotsuzumi.co.jp/global/) from Hyogo, Japan.
Located in the middle of a mountain range in Hyogo prefecture, Nishiyama Brewery has been producing sake since 1849 in the authentic Tamba style. The brewery is known for their preference in choosing to use the most uncommon kobo (yeast), which is the Ogawa 10th. The delicate, and very hard to use kobo produces, not the most fragrant, but the most delicate, and subtle aroma.
We will welcome Mr. Shuzo Nishiyama, executive director for that night. The three sakes that have been carefully selected for that night are:
