Motofumi | 酛踏み


Motofumi refers to mashing the rice, rice koji and water of a kimoto fermentation starter with one’s feet. (think mashing grapes with one’s feet to start off the wine making process). This is not a common method, and is usually achieved using the Yamaoroshi/Motosuri method.
