This sake was created as a “Bridge to the World” by the Master Brewer of Kaze no Mori. It’s juicy, bright with a note of herbaceousness on the aroma. The brewer is obsessed with freshness and this sake is pasteurized, but otherwise exposure to oxygen is limited. This sake also elevates the humble “akitsuho” rice to great heights. Delicious
