Rice resting after milling

After the rice milling process, rice sits for a period of 2-4 weeks. This resting period, known as “karashi” allows the rice to cool from milling and adjust to local humidity and ambient moisture. Karashi means “drying out”, but rice may actually take in a bit of moisture during this period.
