Togaimai | 等外米

Togaimai is un-graded rice. According to the rules, premium sake (Tokuteimeishoshu) must be made using graded rice (there are 5 grades for sake rice, ranging from Tokujo “Above Special” as top quality down to Santtou “Third Class”).

Any sakes produced using togaimai, or un-graded rice must be sold as Futsushu, and cannot be sold as premium sake (Tokuteimeishoshu).
